Asian scrambled eggs on toast

Ingredients

1tbsp vegetable oil

knob of butter

3 large eggs

1tbsp fish sauce

1⁄2 red chilli, finely chopped

1⁄2 tsp sugar

1 clove garlic, crushed

150g/5oz ready-cooked small prawns

handful chopped coriander

2 slices toast, grilled and buttered

Method

In a small frying pan, heat oil and butter over a medium heat. In a bowl, beat together all ingredients, except coriander, then pour into pan.

 

Stir constantly for 2 mins, then add prawns and coriander. Cook for another 2 mins or till cooked to your liking. Season a little and serve on toast.
