Carrot and celeriac crush

Ingredients

900g (2lb) carrots, peeled and chopped

700g (1½lb) celeriac, peeled and cut into chunks

50g (2oz) butter


This easy but delicious side dish is great for a Sunday lunch

Method

Bring a large pan of lightly salted water to the boil. Add the carrots and celeriac, cover and cook for 10-15min until tender. Drain and leave to steam dry in the colander for 2min - this stops the mash being soggy.

Melt the butter in the pan, then add the drained veg and mash roughly. Season to taste and serve at once.
