Chickpea and feta salad
Ingredients
410g can chickpeas, drained and rinsed
75g/3oz cherry tomatoes, halved
30g/1oz black olives, sliced
1 small red onion, thinly sliced
30ml/2tbsp Italian dressing
2 large cos lettuce leaves
20g/¾oz crumbled feta or shaved Parmesan
Chickpeas supply slow-releasing energy, so you’ll feel fuller for longer than you’d expect for such a low calorie count.

Method
1 In a medium bowl, combine chickpeas, tomatoes, olives, red onion and dressing. Mix well.
2 Spoon salad into lettuce leaves then sprinkle cheese over before serving.
