Flavoured sugars
Ingredients
1 each unwaxed orange and lemon
450g (1lb) caster sugar
2tsp dried lavender flowers (we like Barts Lavender, £1.79 for 7g from Waitrose)
1tsp ground cinnamon
1⁄4tsp ground cloves

Method
Preheat oven to 110ºC (90ºC fan) mark 1⁄4. Use a vegetable peeler to pare rind from the orange and lemon in strips, scraping off any pith that comes with it. Put rind on a baking sheet lined with baking parchment; dry in oven for 1hr until crisp.
Blitz to a powder in a food processor. Divide the sugar among three bowls. Stir the lavender into the first, the spices into the second and the citrus powder into the third. Pack into separate sterilised jars.
Keeps for up to three months.
