Method
Put 450g (1lb) frozen raspberries in a non-metallic bowl with 600ml (1 pint) white distilled vinegar, cover with clingfilm and leave for a week, mashing occasionally. Strain into a jug, spoon off froth and pour into sterilised glass bottles.
Keeps for up to six months
