Perfect for vegetable leftovers

Preheat the oven to 200°C (400°F) mark 6. Heat 1 tablespoon sunflower oil in a frying pan and cook 1 chopped onion for 4-5 minutes until soft. Add 4 rashers chopped streaky bacon and cook for 3-4 minutes until golden. Remove pan from heat and transfer bacon and onions to a large bowl. Add 450g leftover mashed potato and 300g leftover mixed cooked vegetables chopped into small pieces, season. Add 25g grated hard cheese, mix and divide the mixture into six portions. Using your hands, shape each portion into a cake. Put onto a greased baking tray and brush with melted butter. Bake for 25 minutes until golden brown. Serve with a poached or fried egg.

Nasi Goreng

chicken,nasi goreng,chicken nasi goreng,prawns,garlic,onion,chilli,plum sauce,soy sauce,sweetcorn,chicken rice,prawn rice,leftover chicken recipe,love food hate waste,leftover,use leftover food,food,f nasi goreng Warm 60ml sesame seed oil in a large pan and gently cook 2 finely chopped onions, 1 deseeded and finely chopped red chilli, and 2 cloves of peeled and crushed garlic until soft. Add 200g smoked streaky diced bacon, turn up the heat and cook quickly, stirring. Put in 100g cooked cold chicken and 100g prawns. Cook quickly for 2 minutes, stirring. Heat a frying pan, beat 2 eggs until smooth and in a little oil, cook on a moderate heat to create a pancake with little or no colour. Turn once then turn out onto a board. When cooked, roll up and slice thinly. Add 250g cooked rice, 100g sweetcorn, 2 tablespoons plum sauce and 1 tablespoons soy sauce to the chicken etc and reheat well, tossing. Season. Serve with the sliced egg pancake on top. 

Oven baked vegetable pilaff

Heat 2 tablespoon olive oil in a medium ovenproof saucepan or casserole dish and cook 1 onion (peeled and roughly chopped) and a little garlic for a few minutes until soft. Season, add 250g mixed vegetables. Cook in the oven for 15-20 minutes until golden and tender. Remove from the oven and add 200g long grain rice, chopped thyme and 500ml hot chicken stock, bring to the boil and season to taste. Cover with the lid and place in a preheated oven and cook for 15-20 minutes, or until the rice is just cooked and all the liquid has been absorbed. Stir in 50g grated cheese and chopped parsley just before serving.

Sweet and Sour Chicken

Fry 1 chopped onion and 1 pepper (cut into strips) in the remaining oil then return the chicken to the pan with the juice from a 200g can pineapple chunks in juice, 1½ tablespoons caster sugar, 2 tbsp soy sauce, 2½ tbsp vinegar, 4 tbsp tomato puree and 1 tsp mustard. Simmer for 10 minutes, or until the chicken is tender. Add 125g beansprouts, 150g mangetout and pineapple pieces. Blend 1½  tbsp cornflour with a little water, add to the mixture. Stir over the heat until the sauce thickens and the pineapple is warm. Serve with boiled rice. 

Anything goes quesadilla

Place a flour tortilla in a dry nonstick frying pan and lavishly spread with  500g cooked sweet potato or butternut squash, right to the edges. Season and scatter with 300g cheese. Top with another flour tortilla and cook over medium heat until lightly browned, about 3 mins. Turn once, and cook the other side until lightly browned and the cheese has melted. Transfer to a board, and keep warm, while you make more. Cut in half or into quarters to serve.
