Low-fat cauliflower cheese
Ingredients
700g (1½lb) cauliflower, cut into florets
4tbsp sauce flour - we used Sainsbury's
Sauce Flour, 57p for 500g
600ml (1 pint) skimmed milk
Pinch freshly grated nutmeg
¼tsp cayenne pepper
½tsp each Dijon, wholegrain and English mustard
150g (5oz) half-fat mature cheddar, grated
3 slices reduced-fat ham, torn into bite-sized pieces
2 large tomatoes, sliced
2tbsp dried breadcrumbs - you can buy these ready-made or dry them yourself in a low oven
It’s still rich and unctuous, but we’ve given this very British favourite a makeover with low-fat ingredients.

Method
Preheat grill to medium. Bring a large pan of lightly salted water to the boil. Simmer the cauliflower florets for 4-5min until tender. Drain and leave to steam-dry in the colander for 2min.
Put sauce flour into a pan with the milk, nutmeg and cayenne pepper. Bring to the boil, whisking continuously until sauce thickens. Simmer for 3min. Stir in the three mustards and 100g (3½oz) cheese.
Arrange the florets, ham and tomatoes in a large ovenproof dish. Pour the sauce over. Mix together the remaining cheese with the breadcrumbs and sprinkle over. Grill for 3-4min until golden and bubbling.
