Hummus

Ingredients

1 x 400g can chickpeas, rinsed and drained

Juice of 1 lemon

2 garlic cloves, crushed

1tsp ground cumin

1tbsp tahini paste

1-2tbsp extra virgin olive oil, for drizzling

Paprika and chopped fresh parsley, to garnish

Toasted pitta bread and Greek black and green olives, to serve

Method

Place the chickpeas, lemon juice, garlic, cumin, tahini and 8tbsp water in a food processor and blend until smooth and creamy. Season and add more lemon juice, garlic, cumin or salt to taste if you wish.

 

Transfer the mixture to a shallow bowl and drizzle with the extra virgin olive oil. Sprinkle over a little paprika and chopped parsley just before serving.
