Parma ham-wrapped fish with creamy leeks and peas
Ingredients
3tbsp olive oil
4 leeks, chopped
300g/11oz peas
200ml/7fl oz double cream
50g/2oz Parmesan cheese (hard Italian cheese), grated
1tbsp English mustard powder
4 fish fillets, such as whiting, weighing
125g/4oz each, skinned
8 slices Parma ham

Method
In a saucepan, add 2tbsp oil and stir in leeks. Cook over a low heat for 10 mins, till beginning to soften. Add peas, stir in cream, Parmesan and mustard, and cook for 5 mins more.
Season fish with pepper and wrap each fillet with 2 slices Parma ham. Heat remaining oil in a nonstick frying pan to medium-high heat and cook fish for 3-4 mins on each side. Serve with leeks and peas.
