Roast parsnips and carrots with apple
Ingredients
3tbsp olive oil
250g/9oz parsnips, peeled and cut into lengths
250g/9oz carrots, peeled and cut into lengths
4 pink-skinned eating apples, cut into quarters and cored
Sweet, caramelised vegetables

Method
Preheat oven to gas mark 6/200ºC (190ºC in a fan oven). In a large roasting tin, add oil then parsnips and carrots, and combine. Cook for about 20 mins, till golden, then remove from oven and toss in apple. Cook for a further 10 mins.
