Peach punch
Ingredients
50g/2oz golden caster sugar
finely grated zest and juice of 1 lemon
75cl bottle rosé wine,chilled
150ml/1⁄4 pint peach schnapps, chilled
1 peach or nectarine, sliced
ice cubes
1l bottle diet tonic water
Mildly alcoholic, yet refreshing and fruity, too

Method
Put sugar in a large bowl and pour on 100ml/ 4fl oz boiling water then stir to dissolve sugar. Add lemon zest and juice then set aside to cool.
Stir in rosé wine and peach schnapps.
Just before serving, add peach or nectarine slices and plenty of ice cubes and top up with tonic water.
