Pan-fried pork chops with apples and cider

Ingredients

2tbsp olive oil

4 pork loin steaks

2 garlic cloves, finely chopped

2tbsp Dijon mustard

250ml (9fl oz) sweet cider

200ml (7fl oz) vegetable stock

2 red apples, each cut into 8 wedges

200ml (7fl oz) single cream

3-4 whole sage leaves

Mashed potatoes, to serve


Use creme fraiche instead of cream, if you prefer, in this tasty dish.

Method

Heat the oil in a frying pan. Add the loin steaks and fry very lightly on both sides. Add the garlic, mustard, cider, stock and apples, bring to the boil and simmer for 5-6 minutes.

Add the cream and sage, then season well and cook for
3-4 minutes or until the pork is cooked through. Remove from the heat and serve immediately with creamy mashed potatoes.
