Quick treacle sponge

Ingredients

8tbsp golden syrup

125g/4oz butter, softened

125g/4oz sugar

2 large eggs

125g/4oz self-raising flour

1 heaped tsp ground ginger

2tbsp milk

 

You will need: a greased 900ml/11⁄2 pint pudding basin

Method

Pour golden syrup into pudding basin.  In a bowl, add butter and sugar, and beat together till creamy. Beat in eggs a little at a time, then fold in flour and ginger and stir in milk to loosen mix.

Pour mixture into basin. Cover with clear film and microwave on high for 6 mins, till risen. Serve with hot custard or cream.
