Bread and butter pudding

Ingredients

  • 50g/2oz sultanas
  • 3tbsp marsala wine
  • 150ml/¼pt milk
  • 150ml/¼pt double cream
  • 2 eggs
  • 2tbsp caster sugar
  • about 8 slices medium-sliced bread, buttered and sliced into triangles
  • pinch of freshly grated nutmeg

You will need

  • A lightly buttered ovenproof dish (or four individual ones) and a roasting tin

Method

  1. Preheat oven to gas mark 4/180°C (160°C in a fan oven). Add fruit to a bowl, pour over marsala and leave to soak while you prepare the pudding – or longer, if you have time.
  2. In a jug, whisk together milk, cream, egg and sugar. Layer slices of bread in dish with soaked sultanas and marsala.
  3. Pour milk mixture over, sprinkle nutmeg on top, then sit dish (or dishes) in roasting tin and fill with boiling water so it comes halfway up side of dish(es). Bake in oven for 30-35 mins, until golden and risen, then remove and allow to stand for a few mins before serving with custard.
