  • 2-3tbsp marmalade
  • 175g/6oz butter, softened
  • 175g/6oz soft brown sugar
  • 3 eggs
  • 175g/6oz self-raising flour, sieved
  • 1tsp baking powder, sieved
  • zest of 1 orange
  • 4-5 pieces of crystallised ginger, finely chopped, or use 2-3 balls of stem ginger
  • custard, to serve

You will need

  • 1.1L/2pt pudding basin, base lined with greaseproof paper

Method

  1. Spoon marmalade into bottom of basin, then put aside. Beat butter and sugar until creamy. Add eggs one at a time, mixing well – spoon in a little flour as you go to stop curdling.
  2. Fold in remaining flour and baking powder, then stir in zest and ginger. Pour into basin, cover first with a pleated round of greaseproof paper, and then with foil.
  3. Sit bowl in a pan and fill with boiling water so it comes halfway up basin. Cover and simmer for 1½ hrs, adding water as needed. Remove, rest, then invert onto a serving plate. Serve with custard. WHY NOT TRY AN EASY CHOCOLATE CAKE RECIPE?
