CREAMY MUSSELS RECIPE

• 1 onion, finely chopped
• 2 large glasses dry white wine
• 2kg mussels, cleaned and any beards removed

Method

1. Add a drizzle of olive oil to a large, lidded pan, add onion and cook on a low heat until beginning to soften. Do not allow to brown.
2. Add wine, and a wine glass full of water, and bring to bubble. Cook for a few mins until smell of alcohol goes. Turn heat down, tip in mussels, give them a stir and put lid on.
3. Cook for 2-3 mins until all mussels are open (discard any that stay closed). Tip into serving bowls, along with some juice, and serve with crusty bread or fries.
