  • 1kg (2lb 2oz)  Jersey royals or new potatoes
  • 1  large fennel bulb, chopped into 2cm (¾in) pieces
  • 1tbsp  fennel seeds
  • 1tbsp  dried tarragon
  • 2tbsp  olive oil

Method

  1. Preheat oven to 200°C (180°C fan) mark 6. Roughly chop the potatoes so they are even sized. Put into a large roasting tin together with the fresh fennel.
  2. Grind fennel seeds in a pestle and mortar until fairly fine. Stir in tarragon, oil and seasoning, then drizzle over potato mixture and toss everything together.

Tips & techniques

Get ahead: Roast potato and fennel mixture up to 4hr ahead. Leave to cool completely, then cover. To serve, uncover and reheat for 15min in a preheated 200°C (180°C fan) mark 6 oven.
