Vegetable stir fry

Ingredients

  • 1 head of broccoli, broken into small florets
  • about 2tbsp oyster sauce (use more if you wish)
  • 300g pack of thick or medium straight-towok noodles

Method

  1. Add broccoli to a pan of boiling, salted water, cook briefly for a couple of mins, then drain and rinse in cold water. Put in a sieve and leave to dry out a little.
  2. Add a drizzle of olive oil to a wok or large frying pan, add broccoli, and stir-fry for about 5-6 mins until it is tender and just beginning to turn golden. Remove and put to one side.
  3. Add oyster sauce to wok, along with a few tablespoons water. Let it bubble, then add noodles, turning until completely coated. Add broccoli and toss, then serve in individual bowls.
