Rubi Rubi cocktail

 

Sparkling Exotic Winter
100mls Tequila
The juice of 2 limes
330mls Rubicon Sparkling Guava
330mls Rubicon Sparkling Lychee
3 or 4 pieces of fresh grapefruit

Pour all the liquid ingredients into a large jug for sharing.  Three-quarter fill the jug with ice and stir until icy cold and add the pieces of grapefruit for garnish.

 

Rubi Rubi Christmas
25mls fresh lime juice
1 spoon of honey
3 mint sprigs
100mls Rubicon Sparkling Pomegranate
100mls Rubicon Sparkling Passionfruit
(optional 50ml vodka)

Add two of the mint sprigs to the bottom of a tall glass. Add the lime and honey and press the mint into the other two ingredients with the back of a spoon. Fill the glass completely with cubed ice and add the Rubicon Pomegranate and Passionfruit. Stir well and place the final piece of mint on top for garnish. Add an optional 50mls of vodka for a stronger version.

 

Tatty Bo Jangles Exotic Punch
1 Litre Rubicon Watermelon
250mls VSOP Cognac
700mls Pinot Noir red wine
330mls Rubicon Sparkling Mango
The juice of one lemon
5 cinnamon sticks
10 cloves

Add all ingredients to a large punch bowl or similar vessel. Add ice until its three-quarters full. Stir until cold then allow to stand for an hour or two to allow the cinnamon and cloves to infuse before serving.

Rubicon Sparkling juice drinks are available at selected Tesco, Asda, Sainsbury's, Morrison's, Somerfield, Budgens, Londis, Co-op and local stores. The range comes in a 330ml can (RRP 55p), a 500ml PET bottle (RRP 89p) and Mango in a 2L PET bottle (RRP £1.49).


 

Non-alcoholic 

Spiced Orange
4x cloves
3/4oz/25ml cinnamon gomme/syrup/sugar
1/2 pressed Lime
4x Maraschino Cherries
4oz/100ml  non-sweetened good quality orange juice
 
Shake all ingredients hard over lots of cubed ice, double strain (you can use a tea-strainer or a sieve to do this) into a tall glass full of crushed ice. Finish off with more crushed ice and garnish with a orange zest with a few cloves pushed through the zest.
 

 

Winter Apple Warmer
3x blackberries
20x dried Juniper berries
1/2oz/18.75ml cinnamon gomme/syrup/sugar
4x cloves
8oz/200ml Good Quality Pressed Apple Juice (cloudy)
 
Use a pestle and mortar (or a rolling pin and a bowl!) to crush the blackberries and dried juniper berries. Add the rest of the ingredients and if you own a coffee machine, steam until hot.  You can alternatively heat it all up in a saucepan. Double strain into a glass mug and garnish with two speared Blackberries. To make it extra special, serve with a ginger snap biscuit.
