Main courses
Herb and garlic stuffed chicken breasts with white wine sauce
Aromatic sour cherry and broad bean pilaff
Side dishes
Grilled spring onions with tarator sauce
Dessert
Warm orange and pomegranate salad with spiced syrup
TIME PLAN
The day before...
Make the verrines and chill in the fridge.
Make the herb stuffing for the chicken and stuff the breasts; cover and chill.
On the day...
11am-midday:
Prepare the ingredients for slaw, tarator sauce, feta parcels and orange salad.
Midday-1.00pm:
Make the carrot and mustard slaw, cover and set aside.
Boil and prepare the potatoes for the crushed potatoes; keep warm.
Make the tarator sauce. Grill spring onions; keep warm.
Prepare and cook the pilaff.
Prepare the feta parcels.
1.00-2.00pm:
Bake feta parcels; start chicken, place in oven. Make sauce, keep warm. Garnish verrines; serve with feta parcels.
2.00-3.00pm:
Serve main courses and side dishes.
3.00-3.00pm:
Make the syrup and serve the salad with coffee.
