St Tola is a citrusy cheese the rind of which wrinkles as it matures creating a wonderfully distinctive taste. It's organic, and it's made in County Clare.

Kinvara Organic Smoked Salmon is dry salt cured for up to six hours depending on the size of the fish and then dried slowly in a kiln. There is no need to reach for the lemon to serve with Kinvara as it is not at all oily. This salmon is firm fleshed, slightly dry with a truly distinctive flavour and is also low in salt.
