Recipes: sticky ribs and easy marinades
Learn how to get the best tasting marinated meat with these tips from Prima magazine
* 2tbsp sherry + 6tbsp olive oil + 1tbsp mustard + pinch sugar + drop Tabasco sauce
* 2tbsp cider vinegar + 6tbsp olive oil + splash chilli sauce + 1 chopped onion
* Juice 1 orange + grated 2.5cm chunk fresh ginger + 2 cloves garlic + splash soy sauce
* Juice of 1 lemon + 1-2tbsp brown sugar + 3 star anise + squirt tomato purée
* 550ml/1pt passata + drizzle sunflower oil + dollop Greek yoghurt + pinch garam masala + pinch chilli powder
Marinating tips
Marinating is the best way to add flavour to your meat and tenderise it at the same time. The longer you marinate it, the better - overnight in the fridge is perfect. Leave in a sealed bag or a non-metallic container. Marinades should be well balanced and contain a mix of something acidic (ie vinegar, lemon juice) with oil and flavouring.
