• 1 tablespoon(s) olive oil
• 125 gram(s) smoked streaky bacon, ham or salami, chopped
• 300 gram(s) leftover vegetables, such as diced courgette, chopped mushrooms or sliced peppers
• Half  quantity tomato sauce
• 50 gram(s) butter
• 400 gram(s) of your favourite pasta
• 1 handful freshly torn basil leaves and fresh parmesan shavings to garnish

Method

1. Heat the oil in a large pan and fry the bacon and vegetables for 4-5min until golden. Stir in the tomato sauce and simmer for 30min. Stir in the butter.
2. Meanwhile, bring a large pan of lightly salted water to the boil and cook the pasta according to the packet instructions. Drain and toss with the sauce. Garnish with basil and parmesan shavings, if using, to serve.
