Made by my mum for me when I was a child. It is the ultimate comfort food, takes no longer than half an hour and will feed 2 people.

Ingredients

U.S. U.K. Conversion chart
  • I lb Bramley cooking apples
  • 2 tablespoon(s) sugar
  • 2  eggs, with yolks separated.

Method

  1. Peel, core and slice apples. Either microwave or boil in small amount of water to make stewed apple. Add half of the sugar. When cooled add the yolks and mix in well. Whisk the egg whites into peaks and stir in the remaining sugar. Put the apples in the bottom of a basin and add the egg meringue on the top, making swirls. Cook in medium oven until meringue is nicely browned, about 15-20 minutes. Enjoy.
