Asian scrambled eggs on toast

• 1 tablespoon(s) vegetable oil
• knob of butter
• 3 large eggs
• 1 tablespoon(s) fish sauce
• Half  red chilli, finely chopped
• Half teaspoon(s) sugar
• 1 clove(s) garlic, crushed
• 150 gram(s) (5oz) ready-cooked small prawns
• 1 handful chopped coriander
• 2 slice(s) toast, grilled and buttered

Method

1. In a small frying pan, heat oil and butter over a medium heat. In a bowl, beat together all ingredients, except coriander, then pour into pan.
2. Stir constantly for 2 mins, then add prawns and coriander. Cook for another 2 mins or till cooked to your liking. Season a little and serve on toast.
