200 gram(s) couscous
Juice of 2 oranges
1 tablespoon(s) finely grated orange zest
6 tablespoon(s) olive oil
1 red onion, finely diced
4 tablespoon(s) chopped fresh mint
4 tablespoon(s) chopped fresh parsley
2 large oranges, segmented
200 gram(s) cherry tomatoes, halved
100 gram(s) (3½oz) baby spinach

Place the couscous in a large heatproof bowl. Pour over boiling water to just cover. Cover bowl and leave for 15 minutes or until water is absorbed. Fluff up with a fork; transfer to a platter.
Mix the orange juice and zest, oil, onion and herbs in a bowl; season. Pour over couscous and mix. Add remaining ingredients. Serve at room temperature.
