Ingredients

  • 350g/12oz self-raising flour, sieved, plus extra for dusting
  • 2tsp baking powder, sieved
  • 100g/41⁄2oz butter, cut into cubes
  • 4tbsp golden caster sugar
  • 1-2 cooking apples, depending on size, peeled, cored and finely diced
  • 1 egg yolk
  • 125ml/4fl oz milk, plus extra for brushing

Method

  1. Preheat oven to gas mark 7/220°C (200°C in a fan oven). Add flour and baking powder to a large bowl and mix in a pinch of salt.
  2. Now add butter and rub in with fingertips until it resembles breadcrumbs. Stir through sugar and apple. Mix egg yolk with milk, and gradually add to create a soft dough. Try not to over-handle.
  3. Transfer dough to a lightly floured board, bring into a ball then flatten to 2.5cm/1in thick. Cut out rounds, gathering dough together when needed, and repeat until all dough is used up.
  4. Sit on a lightly greased tin and brush top with a little milk and put in oven and bake for about 10-15 mins until golden and risen. Cool slightly on a wire rack, then split and serve with blackberry or your favourite jam and crème fraîche, or lightly whipped double cream.
