SHE Balsamic Asparagus food

  • 6 tablespoon(s) extra virgin olive oil
  • 1 tablespoon(s) butter, melted
  • 4 tablespoon(s) balsamic vinegar
  • 550 gram(s) (1lb 4oz) asparagus spears, trimmed

Method

  1. Set oven to 200°C/180°C fan/Gas 6. Line a roasting tin with foil and grease with 1tbsp oil.
  2. In a medium bowl, combine remaining oil, butter, and vinegar. Season well. Add asparagus and toss to coat evenly.
  3. Spread the asparagus on the prepared tin and roast for 6-8 minutes. Roast for up to 2 minutes more for tender asparagus. Serve warm or at room temperature. Photographs Peter Cassidy; food Sunil Vijayakar
