Ingredients

  • 25 gram(s) (1oz) low-fat spread
  • 3  bananas, mashed
  • 1 tablespoon soft brown sugar
  • 1  egg, beaten
  • ½ teaspoon vanilla extract
  • 3 tablespoons skimmed milk
  • 150g/5oz self-raising flour
  • ¼ teaspoon bicarbonate of soda
  • ½ teaspoon mixed spice
  • 1 tablespoon chopped dates

Method

  1. Preheat the oven to gas mark 2/150°C/300°F. Put the low-fat spread in a bowl. Add the mashed bananas, soft brown sugar, egg, vanilla extract and milk and blend until smooth.
  2. Fold the self-raising flour, bicarbonate of soda, mixed spice and chopped dates into the mixture. Pour into a lightly oiled 450g/1lb loaf tin and bake in the oven for 45 minutes.
