Ingredients

  • 1  ripe banana
  • 1 tablespoon(s) lemon juice
  • 30 gram(s) icing sugar
  • 200 gram(s) fromage frais
  • milk

Method

  1. Heat the oven to 180ºC (160ºC fan oven) gas mark 4. Bake the banana in its skin for 30 minutes. Let it cool.
  2. Purée the banana with the remaining ingredients in a liquidiser, adding just enough milk to achieve a dolloping consistency. Transfer to a bowl, cover and chill until needed It can be made well in advance without fear of discolouration.
