Ingredients

  • 400 gram(s) can butter beans
  • 300 gram(s) tub reduced-fat hummus
  • 10 whole(s) Peppadew Sweet Peppers, available from supermarkets
  • a handful or two of flat-leafed parsley
  • ready-made blinis
  • a little lemon zest

Method

  1. Drain butter beans and whiz in a food processor with hummus ,
  2. Sweet Peppers and a handful of flat-leafed parsley. Spread the mixture on top of ready-made blinis. You can freeze any leftover hummus for up to a month. Top with a little lemon zest and more chopped parsley.
