  • 900 gram(s) cooked mashed potato
  • 4 tablespoon(s) freshly chopped flat-leafed parsley
  • 125 gram(s) blue cheese, crumbled
  • A little plain flour to dust
  • 25 gram(s) butter
  • 2 tablespoon(s) vegetable oil

Method

  1. Put the mashed potato into a bowl with the parsley and blue cheese. Mix together thoroughly and season.
  2. Lightly dust your clean hands with flour and divide the mixture into eight, then shape each portion into a small cake. Chill the cakes for 2hr.
  3. Heat the butter and oil in a large pan and cook the potato cakes for 3-4min on each side until golden. Serve with peas and salad.
