Blue cheese and red onion melt

• 1 tablespoon(s) olive oil
• 1  red onion, halved and sliced
• 3 slice(s) blue cheese of your choice - Stilton, Roquefort or Danish blue
• 1  bread flume or small French stick, halved

Method

1. Preheat grill to high. In a frying pan, add olive oil and heat, then add onion and a pinch of salt and cook on a low heat for about 10 mins, till onions have softened.
2. Halve and toast both sides of bread, cut-side down, then turn and toast one - top other with cheese and put back under grill till melted. Top with onions and grill for a few more secs. Season with freshly ground black pepper then top with other half to serve.
