• 1 medium egg
• 125 ml semi-skimmed milk
• 125 gram(s) golden granulated sugar
• 1 teaspoon(s) vanilla extract
• 175 gram(s) plain flour
• 2 teaspoon(s) baking powder
• 125 gram(s) blueberries, frozen
• Finely grated zest of 1 lemon

Method

1. Preheat the oven to 200°C (180°C fan oven) mark 6. Line a muffin tin with six muffin cases and put to one side.
2. Put the egg, milk, sugar and vanilla extract in a bowl and mix well.
3. In another bowl, sift the flour and baking powder together, then add the blueberries and lemon zest. Toss together, then make a well in the centre.
4. Pour the wet ingredients into the dry ingredients and mix in gently, as overbeating will make the muffins tough.
5. Divide the mixture among the six muffin cases and bake for 20-25min. These are best enjoyed on the day.
