Braised Brussels Sprouts with Shallots and Nutmeg

• 1 tablespoon(s) olive oil
• 150 gram(s) peeled and trimmed whole shallots until golden.
• 1  sliced garlic clove
• 450 gram(s) small Brussels sprouts
• grated nutmeg
• salt and black pepper

Method

1. Heat oil in a shallow casserole. Fry shallots until golden. Stir in garlic clove and cook for 1min. Stir in Brussels sprouts along with 75ml (3fl oz) water, grated nutmeg and salt and black pepper. Cover and simmer for 13-15min until tender.
2. Get ahead... Cook shallots and garlic as above, then chill for up to 24hr. To use, complete recipe. Cook's tip Make the sprouts even more special by adding 1tbsp double cream once they're cooked.
