  • 1 tbsp sunflower oil
  • 900g boned leg of lamb
  • 1 red onion, cut into wedges
  • 1 red chilli, deseeded and finely chopped
  • 1 large potato, cut into chunks
  • 1 x 400g can plum tomatoes
  • 300ml red wine
  • 150ml beef stock
  • 12 pitted black olives
  • Fresh flat-leaf parsley

Method

  1. Preheat the oven to 190°C (375°F, gas 5). Heat the sunflower oil in a large roasting tin on the hob. Add the lamb and fry until it’s brown all over. Remove the roasting tin from the hob, add the onion pieces, chopped chilli and potato chunks and toss in the oil.
  2. Add the plum tomatoes, red wine and beef stock and mix well with the vegetables. Season with a little salt and freshly ground pepper and cook for 1-1½ hours, until the lamb is cooked through and the potatoes are tender. Stir in the olives and some parsley, roughly chopped, and serve.
