Broad bean, cucumber and feta salad

• 500 gram(s) (1lb 2oz) fresh or frozen broad beans
• 100 gram(s) (3½oz) asparagus, chopped (optional)
• 1  red onion, peeled and finely chopped
• 1  cucumber, peeled
• 200 gram(s) (7oz) feta, finely crumbled
• 15 gram(s) pack dill, chopped
• 3 tablespoon(s) fresh mint, chopped
• 1-2tbsp extra-virgin olive oil

Method

1. In a saucepan, cook broad beans and asparagus, if using, in boiling water for a couple of mins till tender. Drain and cool under cold water.
2. In a bowl, add onion, then grate in cucumber. Add feta, herbs and cooled veg. Gently combine, and add olive oil to loosen the salad. Season with freshly ground black pepper and leave to stand before serving, to allow the flavours to develop.
