Brussels Sprouts with Nutmeg and Lemon Butter

• 1.1 kilogram(s) (2½lb) small, even-sized Brussels sprouts, trimmed
• 25 gram(s) butter, softened
• Finely grated zest and juice of 1 lemon
• Freshly grated nutmeg

Method

1. Bring a pan of salted water to the boil. Add the sprouts and boil for 4-5min until just tender. Drain and return to the pan.
2. Mash the butter with the lemon zest and juice and nutmeg to taste. Stir into the sprouts and serve immediately.
3. Get ahead Prepare butter up to two days ahead. Wrap in clingfilm and chill. Follow recipe up to the end of step 1 up to 24hr ahead. Cool sprouts under running water. Drain well and store in a plastic bag in the fridge. To serve, reheat sprouts in boiling water for 30sec and complete recipe. Look here too...
