Ingredients

U.S. U.K. Conversion chart
  • 1  onion, chopped
  • 568 ml (1 pint) milk
  • 10  cloves
  • 10  peppercorns
  • 1  bay leaf
  • 1 tablespoon(s) sunflower oil
  • knob of butter
  • 200 gram(s) (7oz) fresh breadcrumbs (about 1?2 small loaf)
  • 1 whole(s) nutmeg, to grate

Method

  1. In a saucepan, add onion and milk along with cloves, peppercorns and bay leaf. Bring to the boil, take off heat and leave to infuse for 20 mins. Drain milk into another pan, keeping onions. Remove bay, cloves and peppercorns from mixture.
  2. In a frying pan, heat oil and butter, then onions. Cook over a medium heat for 15-20 mins, till golden and caramelised.
  3. Add breadcrumbs to milk and simmer till thickened. Grate in nutmeg, stir in caramelised onions and season.
