Carrot and mustard slaw

• 1 small red onion, thinly sliced
• 1.5 tablespoon(s) Dijon mustard
• 2 tablespoon(s) white wine vinegar
• 1 tablespoon(s) capers
• 4 tablespoon(s) sunflower oil
• 1 teaspoon(s) runny honey
• 3 large carrots, shredded
• 2 stick(s) celery, finely julienned
• 2 tablespoon(s) finely chopped fresh dill

Method

1. Soak the onion in cold water for 15 minutes; drain thoroughly and set aside in a salad bowl.
2. Meanwhile, make the dressing in a small bowl by whisking together the mustard, white wine vinegar, capers, sunflower oil and honey; season well.
3. Add the carrots, celery and chopped dill to the onion and pour over the dressing. Toss to mix well and serve.
