Carrots with honey and lemon

• 900g/2lb baby carrots, scrubbed
• 1 large knob of butter
• 1 teaspoon(s) honey
• 1 small bunch chives, finely chopped
• zest of ½ lemon (optional)

Method

1. In a large pan of boiling, salted water, add carrots and half of butter and cook till soft, but they still have a bite to them. Drain, then heat a frying pan and add the rest of butter and honey. When melted, add carrots to pan and toss till well coated. Cook for a few mins, then season with sea salt and freshly ground black pepper.
2. Tip carrots into a dish and toss lightly with chives, then sprinkle lemon zest, if using.
