Ingredients

  • 1 large cauliflower, green leaves retained, stem removed, cut into florets
  • 40 gram(s) (11?2oz) butter
  • 40 gram(s) (11?2oz) plain flour
  • 600 ml milk
  • 125 gram(s) mature Cheddar cheese, grated
  • 4  rashers streaky bacon
  • 4 piece(s) sun-dried tomato, drained and sliced

Method

  1. Put the cauliflower florets into a large pan of boiling salted water and cook for 10-12min or until just tender, adding the green leaves for the last 2min of the cooking time. Preheat the grill on high.
  2. Meanwhile, melt the butter in a pan, then add the flour and cook, stirring, for 1min. Gradually stir in the milk and cook for a further 3-4min until thickened. Stir in half the cheese. Season sauce well. Grill the bacon for 6-8min, turning once, until crisp.
  3. Drain the cauliflower, put into a warmed gratin dish and pour sauce over. Sprinkle the remaining cheese on top and grill for 3-4min until bubbling. Cut the bacon into pieces. Scatter bacon and tomatoes on top of dish. Serve with baked potatoes.
