Ingredients

  • 1  red onion, chopped
  • 1  garlic clove, crushed
  • 250 gram(s) butcher's quality sausages
  • 2 tablespoon(s) freshly chopped sage leaves
  • 3 tablespoon(s) freshly chopped parsley leaves
  • finely grated zest of 2 lemons
  • 40 gram(s) dried unsweetened apples, chopped
  • 16  rashers streaky bacon
  • 2  x 750g (1lb 10oz) skinless turkey breast joints or leftovers
  • YOU WILL NEED: Extra-strong nonstick foil

Method

  1. Preheat oven to gas mark 6/200?C (180?C in a fan oven ). Heat butter in a pan and gently fry onion for a few mins. Add garlic and cook for 1 more min, then remove from heat. Slit sausage skins and squeeze out meat into a bowl. Season with freshly ground black pepper, then add sage, parsley, lemon zest and apples. Tip in onions and garlic and mix everything well together.
  2. Lay out 2 large sheets of foil on work surface. Line up 8 bacon rashers on each piece of foil, vertically, next to each other. Remove any string from turkey breast joints and position horizontally in centre of bacon rashers, then cut a slash horizontally down centre of each turkey breast. Season with salt and freshly ground black pepper. Spoon sausage stuffing down centre of each, lift up turkey breasts to enclose stuffing, then wrap in bacon. Secure with wooden skewers and wrap tightly in foil. Place in a tin and roast for 1 hr 30 mins. Insert a sharp knife into foil and turkey - it is ready if juices run clear. Leave to cool in foil, then chill till needed. Slice to serve.
