Peel and roughly chop 900g (2lb) celeriac
900 gram(s) potatoes

Wash 900g (2lb) potatoes and put in a pan of salted water. Bring to the boil and cook for 20-30min or until the vegetables are tender. Drain and mash either with a potato masher or by whizzing quickly in a food processor. Heat a 142ml carton double cream and 150ml (¼ pint) milk and beat into the mash over a low heat. Season well with salt and ground black pepper.
PREPARE AHEAD Peel and chop the celeriac and potatoes, put in a bowl of cold water with a slice of lemon and chill overnight. To use, complete recipe.
