Ingredients

  • 2  x 20.5cm (8in) pizza bases
  • 4  level tsp Dijon mustard
  • 1 large red onion
  • 225 gram(s) courgettes
  • salt and ground black pepper
  • 2  spicy sausages
  • 2  x 100g (3½oz) packets soft goat's cheese
  • fresh thyme sprigs
  • olive oil to drizzle

Method

  1. Place the bases on baking sheets and spread with mustard, sprinkle over the thinly sliced onion and wafer-thin courgette slices; season. Remove the sausages from their casing; crumble on top of each pizza with the goat's cheese. Sprinkle the thyme over, drizzle with olive oil and cook at 200°C (400°F) mark 6 for 45min or until the crust and sausage is brown and the vegetables are cooked. Swap the pizzas around in the oven halfway so they cook evenly.
  2. COOK'S TIP Preheat your baking sheets for a crispy pizza base.
