SHE quesadillas

Ingredients

  • 2  x 180g bags baby spinach leaves
  • 1 pinch(es) grated nutmeg
  • 4 tablespoon(s) Eazy Fried Onions
  • 8  corn or flour tortillas
  • 300 gram(s) mild Cheddar cheese, grated
  • Lime wedges, to serve, if desired

Method

  1. Cook the spinach for 1-2 minutes in simmering, salted water until wilted. Drain, squeeze dry and place in a bowl. Season with the grated nutmeg, salt and freshly ground black pepper. Stir in the dried onions and mix well.
  2. Place a tortilla in a dry, non-stick frying pan and scatter with a quarter of the Cheddar cheese. Then add a quarter of the spinach mixture. Place another tortilla on top to form a sandwich. Cook over a medium heat until lightly browned. Turn once and cook the other side until lightly browned and the cheese has melted.
  3. Repeat with the remaining tortillas, cheese and spinach mixture. Serve the quesadillas cut in quarters with lime wedges, if desired.
  4. Why not experiment with a variety of fillings, such as ham, chorizo, tomatoes, spring onions and sliced peppers? The combinations are endless!
