Ingredients

  • 4 slice(s) good-quality white bread, buttered
  • 100 gram(s) (3½oz) Gruyère, grated
  • 200 gram(s) cooked chicken breast, roughly shredded
  • 4 large slices cooked ham
  • 4 tablespoon(s) butter, melted
  • 4 tablespoon(s) finely grated Parmesan

Method

  1. Place the buttered slices of bread on a clean work surface. Sprinkle half of the grated Gruyère over 2 of the slices of bread, then cover the cheese with the shredded chicken and ham. Sprinkle the rest of the Gruyère on top, season well with salt and freshly ground black pepper, then top with the other slices of bread. Press down firmly.
  2. Brush half of the melted butter on top and sprinkle over half of the grated Parmesan. Place the sandwiches about 5cm (2in) under a medium preheated grill for about 2-3 minutes. When golden brown, turn them over, brush the other sides with the rest of the melted butter, sprinkle the remainder of the grated Parmesan on top and grill for a further 2-3 minutes. Remove the sandwiches from the grill, cut in half diagonally and serve immediately.
