1 tablespoon(s) vegetable oil
8 whole(s) chicken drumsticks
½tsp each ground cumin, coriander, cinnamon and paprika
75 gram(s) ready to eat dried apricots, finely chopped
40 gram(s) (1½oz) raisins
400 gram(s) tin chopped tomatoes
75 gram(s) couscous
1 large handful fresh coriander, chopped

Heat the oil in a large heat-proof casserole. Brown drumsticks well all over. Stir in the spices and cook for 1min. Add apricots, raisins, tomatoes, 400ml (13fl oz) water and some seasoning. Simmer for 10min.
Stir in the couscous and simmer for a further 5min, until couscous is tender and chicken is cooked through. Check the seasoning. Sprinkle with chopped coriander and serve immediately.
