chickpea feta salad

  • 410 gram(s) can chickpeas, drained and rinsed
  • 75 gram(s) (3oz) cherry tomatoes, halved
  • 30 gram(s) (1oz) black olives, sliced
  • 1 small red onion, thinly sliced
  • 30 ml (2tbsp) Italian dressing
  • 2 large cos lettuce leaves
  • 20 gram(s) (¾oz) crumbled feta or shaved Parmesan

Method

  1. In a medium bowl, combine chickpeas, tomatoes, olives, red onion and dressing. Mix well.
  2. Spoon salad into lettuce leaves then sprinkle cheese over before serving.
