These heavenly biscuits are the creation of chef Michael Caines. If you can't find baking chips made of top-quality dark chocolate, buy the chocolate in a block and chop it coarsely.

  • Makes about 25 biscuits
  • 110 gram(s) unsalted butter
  • 130 gram(s) caster sugar
  • 60 gram(s) soft brown sugar
  • 1tsp vanilla extract
  • 1  egg
  • 110 gram(s) plain flour
  • ½tsp baking powder
  • ½tsp salt
  • 225 gram(s) dark chocolate, chips or coarsely chopped
  • 150 gram(s) chopped walnuts

Method

  1. Cream together the butter, caster and brown sugars and vanilla extract until fluffy. Beat in the egg. Sieve the flour with the baking powder and salt and fold into the creamed mixture, followed by the chocolate and walnuts. Cover and chill for an hour.
  2. Heat the oven to 160°C (320°F) gas mark 3. Roll the mixture into small balls, about the size of a walnut. Place the balls on a baking tray, spaced about 4cm apart, and bake for about 12 minutes. Cool on a wire rack before storing in an airtight container. Recipe by Shona Crawford Poole
